Indeed, it was an economical dish, rich in flavors, that could feed several people and that could be prepared quickly. ![]() It became very popular with the islanders. History took its course and Samoan chop suey gained popularity. Liver, gizzards or other viscera were used because meat and chicken were far too expensive for the locals. The original dish was known as za sui and consisted mainly of vegetables and offal. Sapa sui was born from this union and is therefore the intersection of two culinary cultures: Chinese gastronomy and local indigenous gastronomy. However, this has not prevented many Chinese migrants from marrying Samoans. The laws of the time prohibited workers from mixing with Samoan locals. But this period of prosperity lasted only until 1914, which marked the beginning of the decline of the island and the growth of poverty in the archipelago. He was very popular with the locals, and thanks to him, they enjoyed a prosperity that will remain engraved in the history of the Samoan colonial era. Other sources claim that it was introduced by Chinese workers from the southern provinces of Guangdong and Fujian during the German rule of Samoa (1889-1914).ĭuring this period, a German governor, Wilhelm Solf, did a remarkable job and allowed the Samoans to become economically self-sufficient, without financial support from Germany. ![]() Some accounts claim that it was introduced by the first free Chinese settlers around 1840. While no one knows the exact origin of this iconic noodle dish similar to chop suey today, sapa sui is very common in Samoa. Samoa is an archipelago composed of ten islands, two main ones: Upolu and Savaii to the west of it.
